pick up not shipped

How can I protect myself on paypal. I have an online store but we also offer local pick-up after payment through paypal. If I have the buyer sign a paper saying they picked up the item is that enough protection on paypal?

If not what card company can I use for card payment through the website before pick-up?

You should never use paypal for an item that is to be collected or personally delivered as you have 0 seller protection.
Your buyer can collect the item and then file a dispute for non receipt of item. As you would have no tracking number to prove delivery of the item to him then you would lose the dispute.

My advice is ask for cash only on that sort of item.
That way you have cash in hand / no wait / no fee / no risk of a dispute.
