What if I suspect an ebay buyer may have used fraudulent payment source

An ebay buyer purchased a valuable gaming item from me (>$500). But the person has an ebay score of just 3 and the ebay account was only opened in April. Nevertheless, their payment has cleared in Paypal. I'm considering canceling the sale, which will result in a loss of fees for me, but that's less than losing the item. Is there a way to have Paypal look into it, to see if the person paid honestly? AND...if I do follow through with the sale, what should I do in order to have proof of the item's quality as well as delivery and receipt in the event the person files some sort of false claim? with Paypal? I've read plenty that indicates Paypal always sides with the buyer. How do I Really protect myself here? Thank you in advance.

That depends on MANY factors all listed in Paypals seller protection policy for you to read so you can risk assess your transactions.
Legal (bottom right of Paypals pages) > user agreement > seller protection.
