When I send a payment to someone as buying products or as "friends & family" (because they may not be my real friends or family)

What are all the possible information that they can dig and find out about me on their setting or invoice something? My full name, my email address,

my address, anything else? If I am not buying actual products and do not require shipment, can I have address

hidden? and How?
