Protecting yourself from potential scammers (Services not being delivered)

Hi everyone...
I have been in contact with someone that will teach me some music production via Skype/Zoom. He seems legit.
He is in Brazil, I am in Cape Town. I need to pay a deposit.
He is quite famous so I doubt he will scam me. I only have him on whatsapp and facebook.
I suggested we use PayPal as a payment method - he agrees.
QUESTION: How to I make sure I am protected should he scam me and not deliver the service?
Will PayPal refund me 100% of my money?
Do I need to put a contract together as proof with him?
The music course is over an 8 - 10 week period.
