I plan to buy a secondhand VR headset and pick it up in person from the seller. If the headset turned out to be defected (significantly not as described), would my transaction be covered by buyer protection, or would it be voided because the exchange was made in person?

If you read the small section on buyer protection in paypals user agreement then you would see that unfortunately it does not cover items personally delivered or collected.
Advice is voluntary.
Kudos / Solution appreciated.
