How long can paypal hold my money? They hold anything I bring in over 500.00 for 30 days

It sounds like you have what we call "payment holds" or "reserves" placed on your account. This means that any payments that you receive into your account will be held for up to 30 days. Once this timeframe passes you should see your funds be released and added to your available balance.
