Is currency conversation shown to recipient?

If I were to send funds from my balance to a business in a different country, for this example lets say I use £s and they want payment in $s. Would they see the original currency and amount in £s - and also the amount I paid - or would they only see the exchange rate on their end? Would they ever know it was even converted? Also, if a product costs e.g $40 but in pound sterling it comes to £25, do I need to bump my payment up - which would then result in me paying too much, or do I stick to £25 and let PayPal sort the rest? I hope that makes sense. Thanks
