When I'd receive payment, I would usually go to the wallet tab to convert the currency to my primary, but it has since disappeared and now displays a payment method with my bank account. In other words, I used to see this https://i.imgur.com/U3jOMw7.png in the wallet tab, and now I see this https://i.imgur.com/0n2EdaF.png Any ideas?

On the Wallet page, select PayPal Balance on the left column to see the PayPal Balance and what have you as on the first image. It looks like you selected Bank account instead and is shown that the second image. Unless your PayPal balance up and disappeared. Then you'll have to contact PayPal customer service and get tech support on the horn:
Click HELP at the top menu, scroll down to click CONTACT US, and then scroll down to click CALL US.
Call early, during business hours, west coast time to try to get a US rep. Say "Live Agent" to the automated recording.
Or private message via social media:

Twitter: @AskPayPal
Kudos & Solved are greatly appreciated. 🙂

This is what I see on the wallet tab - https://i.imgur.com/KJbmH6L.png
I don't see an option for paypal balance on the left hand column.
Although I am not able to see my balance in the wallet tab, I am able to see it on the main page, where everything appears normal. Thanks.

For personal account this have been moved.
You can find the current conversion rate by going to Send & Request, on the right side menu click Send to friends overseas
Select the region you're paying into. eg United States (if you have a different primary currently) and click next.
Given my primary is AUD I get the following. A good look at the current conversion rate to USD.
