Is there a way to have my last name not show up with my paypal.me link? Right now my first and last name show above my paypal.me link.

No, once a link is created, it can't be changed. You can disable the link from use instead and give out your PayPal email address so sender can pay you or create a PayPal invoice or send a money request.
It happens. Hit the "Login to Ask the community" button to create a question for the PayPal community.
