Internal Server Error 500 On Production when creating payment, Payment still processed

Using REST API.
We have received ~10 scenarios in the last month where we receive internal server error, but the transaction is successfully processed. This only started happening in the last month.
What could possibly cause this scenario?
What can we do to stop this from happening?
