I sold a $2100 ring and the buyer wants to pay via PayPal. Is it ok to let buyer take ring once I see payment hit my PayPal account or should I wait for payment to post to my bank account once I transfer it?

You should never use paypal for an item that is to be collected or personally delivered as you have 0 seller protection.
Your buyer can collect the item and then file a dispute for non receipt of item. As you would have no tracking number to prove delivery of the item to him then you would lose the dispute.
It matters not whether funds are in your paypal account or bank account if a buyer wins a dispute and you refuse to refund then paypal will put your account into negative and chase you to pay them back.
You really need to read up on paypals seller protection policy in their user agreement so that you can risk assess your transactions.
