So around 3 months ago on eBay I completed a transaction with a buyer for a local pick up item, now 3 months later he has opened this case via paypal. The problem is the only way to respond to the case is by entering in tracking info, but I have none because the item was local pickup. What I do have is eBay messages confirming that the buyer received the item, and he even left positive feedback on my Ebay page saying "great seller, fast delivery".
What is the best way to go about resolving this case?

You should never use paypal for an item that is to be collected or personally delivered as you have 0 seller protection.
Your buyer can collect the item and then file a dispute for non receipt of item. As you would have no tracking number to prove delivery of the item to him then you would lose the dispute.
That is why Ebay give you the option of 'cash on collection' and you can state in your decription that that is the only payment you will accept. If a buyer pays with Paypal then you are allowed to refund that payment and re-state 'cash on collection'.
That way you have cash in hand / no wait / no fee / no risk of a dispute.

@kernowlass So I automatically lose the dispute. Are there any other options to fight back?
Is there anyway someone at paypal could look at the eBay messages or the buyers feedback confirming that he received the item?

You don't automatically lose it but there is a high chance that you will.
They may view your auction and if you listed as cash on collection or collection only then you 'may' win.....but to be honest not sure you will as paypal do not have the time or take any notice of 'messages' from one party to another unless they are in the resolution centre.
