How do gift certificates work?

I have a simple site at www.weeklywatercolor.com.  I sell original paintings, one at a time, for $100 each.  I use buy now buttons.  I would like to sell $100 gift certificates.  But I can't find anywhere that explains exactly how they work.  Looking thru posts, it sounds like they are sent via email (or optionally snail mail) to the buyer.  Is there then an option to apply them when someone purchases a painting?  How does it work.  Where is the explanation of the process?  Thanks.
