Buyer says item not received, and now they are no longer registered with ebay

I've sold a few things on eBay and this is my first dispute. I sent two giftcards out and stupid me didn't send it with delivery confirmation. I do have the receipts for the gift cards (one I got as a gift and the other I received as merchandise credit from a return so I'm hoping that's trackable).
The buyer escalated the claim within 4 days after she paid and she is now no longer registered with ebay. Sounds very fishy to me. I'm going to contact the giftcard's stores and see if they can tell me if the cards have been used.
I've emailed the buyer and I haven't gotten a reply back, just the dispute and escalation emails from paypal. I'm afraid I might be **bleep**ed.
Does anyone have any advice? Especially if the stores cannot give me any information.
