I dispatched an item that I sold within eBay and provided tracking details to the buyer, eBay and PayPal but the buyer still managed to get a refund? Now I'm confused as to how to get my parcel back considering it's already in the process of being delivered 😞

In the event of an item not received dispute the only way a seller would win is if a tracking number proved the item as DELIVERED to the buyer.
If the buyer didn't receive the item then of course they would be refunded.
If it eventually is delivered then you could send the buyer a money request and see if they will pay you again but no one can force them to do so.
Advice is voluntary.
