Disputed payment

I have had someone dispute a payment they have sent me for a good after I have already received and added to my bank acct. The transaction was made on 8/18, dispute was made 8/23 and was actually 1 of 3 transactions made to me by the customer. I have text sent from me to this person stating the payment was non refundable and they were informed and still sent payment. How can I be sure PayPal gets my side of story and I can show payment was non-refundable?
