I requested a payment to the buyer via PayPal. They then texted me asking me what my email was associated with my paypal account. Would they need my email once I sent them my request or am I dealing with a scammer?

If you sent a money request or invoice then all they have to do is pay it.

If they are asking for your email address then it may well be to send you 'spoof' paypal emails pretending they have paid when they have not.

No funds in your paypal balance = not paid.
