Greetings. I am looking to switch to paypal from square. I do not want to offer the option of Echeck or anything delayed as we require payment within 12 hours and must ship out immediately. We are unable to hold merchandise. Is there a place I can limit this ? I also do not want pay after delivery etc...
I want access to my funds and not having things held.

You can specify to NOT accept credit cards but your can't NOT accept echecks.
PayPal also has various reasons to hold funds even after payment is completed.
Make sure you read and understand all of PayPal policies.
I'm familiar with Square's practicies for in-person credit card payments with immediate deposit. I am not familiar with Square policies for online sales.
